Freezer is fortunately full canning the one I just got last week. They have gone totally nocturnal here.

A beautiful morning in Hancock County, and the deer have been moving. I've seen six does and a really nice 115/120 eight pointer. Watched him for several minutes. I hope he makes it through the season, but I wouldn't be disappointed if my son shot him. Good luck guys.

Never canned one before.
I saw 11 does and 2 small bucks between 7 and 7:30. Only thing I've seen since was a beautiful fox squirrel I wish I could have gotten a picture of. His head was black, but the rest of his body was mostly white with a strip of gray down his back and the top of his tail.

We just cut it into chunks small enough to fit in jars. Fill to air gap(1/4 inch or so from top) put lids on. Place in pressure cooker at between 10-15lbs for I think hour and half of so. That's it. No salt (can season to taste but limits what you can use it for). So tender it melts.
Just meat no water or what?
You can put just a little water In but doesn't need it. Renders out as it cooks.
