15.8lb NY Strip loin going in the smoker

Oh man, enjoy those steaks - they're going to be good. Did the full smoker last year for family and friends on Christmas and loved it, going lower key this year with filet on the egg tomorrow afternoon.
I bought a whole tenderloin from Costco. I can't decide whether to cook it whole or cut into individual steaks. Also.. BGE guy here too.
 
Had to cut it in half to fit in smoker- left the fat cap on. I’ll have to take a few extra cholesterol pills cause I love the fat.

I see people cutting off and discard the fat, wrong, the fat flavors the meat. Nothing wrong with eating a little of the fat with the meat!
