My thoughts exactly! I have an 8" knife that I use now. It is a little short but does a good job. Something a little longer would be great.I agree. Something in the 10-12" blade length maybe.
I'd like to come by and see you work!
OH I may have to get one of those too!! Although 14" does seem to be a little long for my taste.

I didn't make it to San Antonio much. I do miss some of the good restaurants there. Hard to find truly good Mexican and Sea Food here. There are some good places here but they don't compare to some of the places in Houston and San Antonio.San Antonio (just typing that made me want Puffy Tacos from Henry's)
