9mm Hourglass Shape?

I don't see anything wrong with them. After all, you are shoving a .356 diameter slug into the case that has an inside diameter of about .351, that extra .005 has got to go somewhere and the slug doesn't shrink!

Don't sweat the hourglass. I've got tens of thousands of 9mm rounds downrange that looked like that. You'll find that if you back the sizing die off too much you will have chambering issues as the case isn't sized enough. Glocks are a little more forgiving, but chamber checking is the way to go. I do it for every round I load. It's an extra QC layer that makes sure it'll even fit, along with verifying the primer is seated correctly, no unusual signs, etc, etc.

I've got an EGW chamber checker that works pretty well. As mentioned above, the easiest is to take the barrel out and drop the rounds in. They should drop in with a clunk and fall out again (provided you have a reasonable clean chamber).
