street cred so far has been the only certification I’ve seen (trusted)
Yeah. But I am not sure you want to go to there.
Those wizard's in the Pakistan caves of the Khyber region can teach you to make some impressive AKs. And if you find one that can read or write, then I am sure they would make you a certificate.
AKs are easy to make.

There's to much variation in AKs for there to be a all encompassing "course". I see rifle dynamics course as more of a "hey I like to build stuff, I've put my lego ARs together I'd like to try an AK". And not I'd like to specialize in AK work and do that at a commercial level. But I have not taken a rifle dynamics course nor do I plan to so I very well could be incorrect on the level they go into.

I am not an AK builder but it seems that there ar a lot of technologies like welding, precise drilling, pressing and heat treating that take some time to master. It does not seem like something a person without a background working with metal is going to master in a course in a few weeks.
