You got it my southern friend!!!!! My family did this every year when I was growing up. I still have a boiler on my land in South Georgia. My dumba** auntie's husband burned down my shelter just last year but the chimney and boiler are still standing.
Nah... they would be in an old tin-covered shed, with a John Deere engine driving a steel mash wheel to squeeze the juice down a long shoot into the pans, where it is boiled and skimmed, then flows to a second pan for finishing, then out through a plain old spigot into the awaiting pint and quart jars... that image is just too fancy for quality "sogum" making!! I helped my uncle make a bunch of this back in Alabama, along with a few other local corn and sugar related products!!
