Beef ribs on the Big Green Egg

I have cooked about everything under the sun on my BGE, and today I decided to try and make perfect beef ribs.

Here is the start of the adventure.

Just sitting out warming up to room temperature before the cook.

Now adding a slight dusting of some Stubb's BBQ dry rub.

Throwing them on the heat. 265 degrees for 3 hours with some cherry smoke directly underneath them.

After 3 hours on indirect heat and smoke.

They are now in an aluminum pan with a beer bath to keep moist, until they hit about 200 degrees. Then out to baste for a few minutes then off to the table.

Nice- do you make your own dry rub?

Never made my own rub yet. I usually stick with Stubb's, 3 Beer Rub, Butt Rub, or any other "odd brand" that I find out and about. I find the lesser known, non-mass produced rubs are pretty good.

Never tried beef ribs. Let us know how they turn out.

I've done beef ribs before, but I usually did not have enough time and they always get rushed. Tasted good, but not real tender. I'm using a 6-7 hour recipe today, so I'm hoping they are nice and tender.

Absolute perfection. They were as tender as any roast I have ever eaten.

I took them out of the aluminum pan and put back on the grill for about 20 minutes or so. Very lightly basted with a light BBQ sauce then just flip them a few times to let the sauce caramelize.

They were fantastic.....
