I've done a couple Thanksgiving turkeys on the BGE over the years.
I've done the below and a variation or two. Good stuff and I actually dislike Turkey... this taste more like Chicken. Lol

I've used different types of wood, but Pecan seems best.

You can do it that way or in a roasting pan.

Perzakly!! I just love folding the wings back and adding an infused garlic and butter spread under the skin..Then I stand that puppy up and let it smoke..
