Bruny Island trip..........

I thought a fine Bordeaux and Sausage would be a great pairing.. But, you can never go wrong with a French Champagne...!

I like your thinking but it’s a tradition. And for the record it’s not champagne. It’s Crémant de Limoux, it comes from southern France just half an hour from where we stay when we are in France and is a quarter of the price or more of champagne. The locals have nothing but contempt for champagne which they say is all yeast and sugar, whereas Cremant is naturally fermented. If you like bubbles I recommend you try it, it’ll save you a fortune and I defy anyone to say it’s not as good.
