" Captain D's" style catfish

- 1 1/2 cups all purpose flour
- 1/2 cup cornstarch
- 1 tablespoon baking powder
- 2 teaspoons kosher salt, don't be scared to add more
- 1/2 teaspoon of cayenne pepper, I like mine a little heavier but this is good for the whole family seasoning
- 1-2 teaspoons of garlic powder
- 1 1/2 cups cold water.
Mix the dry ingredients well, I'm a fan of sifting flour anytime I use it. Definitely doesn't hurt here. Once the dry ingredients are mixed add your cold water and mix well. Don't be concerned if it bubbles a little, it's fine. I like my catfish in thin strips when I do this. You will already have a lot of breading you need to cook through, a thick piece of fish isn't going to make for a pleasant meal. Roll the fish well in the batter and drop it one piece at a time, I hold mine over the mix bowl for for second if it wants to drink . Fry them till they are that nice golden and have a good "shell" if you will. Enjoy
