I think I'd be fine with the drum brakes myself. I know you're going with a minimalist build, so I think a set of Magnum 500s would look great on it. I also like the steel factory GT wheels.Sure does sound good.
Yeah, The disk brakes and t-5 would help the drivability.
I don't mind points and drum brakes though.
