If you have eaten ground beef from the supermarket,
I can almost insure you have eaten beef hearts.back in the days of swinging beef butchers would order cases of beef hearts to mix with the trimmings.that’s why ground beef was always on special.it was very cheap to make.
hearts are nothing but a muscle

well if you were born and/or raised in rural Georgia,like I was, there was always some kinda poor animals intestines being fried,baked or in a mull.

Go to granny’s on Sunday and there may be possum, squirrel, rabbit (my favorite), deer, raccoon or who knows what on the stove. We ate ( and still eat) it all.

I use to hunt with a old fellow in the 70s that would gut the deer in the woods,and slice and eat the liver on the spot while it was warm.
