Yes! I did a hen once also, but I didn't realize hens need the slow, long cook...it was good but now I know where the saying "tough old hen" comes from!

I have seen it done, but never done it myself. Would definitely like to try it on the smoker. We deep fry every year maybe I’ll do both next year. By the way that’s an awesome stainless prep table.

I have cooked bunch of chickens that way but never a turkey.
Me neither. But it sounds intriguing. I think it's a chicken in the pics though, looks small to be a turkey...
