Pork butts are pretty straight forward. There's a thousand different recipes for marinades/injections, rubs, sauces, wood chips but it all comes down to what you like. I prefer to coat the butt the day before with yellow mustard, then a rub, wrap it in plastic wrap and let it sit in the fridge overnight. Take it out early, let it rest while I get the smoker going and I use a meat thermometer (instead of time) and cook it to 195 so it breaks down and easily pulls apart. Make sure you let the meat come to room temp before putting it in the smoker especially if it was frozen (thaw in the fridge for several days). Experiment with different recipes and have fun but remember everyone's recipe, chips, rub etc is the best one.:)
