First time I've used a crock pot in 20 years. Soooooo good!

Flavorful Pot Roast

Sear a 4lb chuck roast with a little oil that has Montreal seasoning in a pan. Set aside.



In same skillet

Half stick of butter

One large, chopped onion

3 cups diced carrots

16oz jar of Pepperoncini with juice (Mezzetta brand)

One pack each of McCormick Beef Stew Mix and Au Jus Gravy Mix

One pack Hidden Valley Ranch Seasoning

15oz can of tomato sauce

Half can of water



Stir together and let simmer for 5 minutes.



Put roast in crock pot and cover with gravy mix. Cook on high for 8 hours. Serve on rice or mashed potatoes.

Never would have thought to add pepperoncini… sounds like an excellent pot roast.
 
For your next gathering-

Man Dip-

2 lbs Jimmy Dean Sausage, your choice on hotness.

1 Can Rotel w/green chiles

2 packs of Philly Cream Cheese

Crock pot

Brown sausage, drain well, drain Rotel, mix with sausage. Stir in Philly cream cheese, let simmer in crock on medium.

Serve with your choice of dipping cracker/chip.

That Montreal Steak Seasoning is also good to season soups. I made a batch using leftover beef from the Christmas roast, Polk's spicy pork sausage (I microwave it like venison sausage rolled up in paper towels to lighten the grease load), a 24 oz. bag of frozen mixed vegetables, a bag of cut okra, a quart of beef broth, a large can of crushed tomatoes, and a large can of diced tomatoes. Bring to a gradual boil then simmer for about 45 minutes. Season to taste and enjoy.

The photo below is before it came to a boil. I transferred some to another pot so it wouldn't boil over.
