Gumbo?

Im doing a big pot of gumbo for New Year's Eve, I've got a bunch of deer summer sausage I'm putting in it with some shrimp. Anybody got a killer gumbo recipe?

I don't think I'd be doing that....
I'm a chicken and sausage OR seafood only guy, but if you insist on mixing them, here's an authentic recipe.

It's spicy, smoked sausage. Similar to andouille, shouldn't be much difference

Sounds like a good sausage, but summer sausage is more like a salami or pepperoni.

Yes, a smoked sausage would work. A summer sausage I suspect would turn to mush.

It doesn't belong in gumbo (or anything else but that's a different thread).
