I grew up on Gumbo. Just about all the older people made it, My great Aunt made it for a long time. She was born in the late 1800's and she took care of me when my mother was working. Frying pan and pots were Cast Iron.
She made fantastic Gumbo,Jambalaya and everything in between. We usually had the Seafood or Chicken Gumbo and sometimes Okra Gumbo. I don't like Okra but the way she did it for Gumbo was delicious. I am Creole so it was sort of a given to make all this.

Have a lady here in NC who is from NO who cooks the best Cajun food around. Jambalaya and gumbo is out of this world, fine lady as well.
