How do you cook your Pheasant ?

I've got lots of skinless pheasant breasts from a recent hunting trip.
What's your go to recipe?
I don't want them to dry out and I can't use pork products (bacon) if I serve it to the wife.

I would debone out of breast,and wrap in bacon for moisture.i would then marinate in dales seasoning for about 4 hours I would go 1 to 1 with water dales is pretty strong.
