How do you like to cook your Turkey ?

Brined for 24 hours, 12 hours unwrapped in the fridge, bring it to room temp before it goes in the smoker. I use a charbroil infrared smoker, hickory chips, takes about 3-4 hours. Best turkey you've ever had in your life. Guaranteed
 
I just put three 12 pounders in the he smoker for lunch today. I really can't decide if I like fried or smoked better, so I tend to alternate. Some years I do both. But for the cost of oil, I can buy quite a few extra turkeys to smoke throughout the year. When I had a Mercedes that ran on veg oil, I tended to fry more since I would reuse the oil a few times and then drive around with it.
