How to prepare ground wagyu beef patties

I would season with fancy salt, light pepper, patty them up. Then Sous vide and finish on cast iron.

No sous vide. Let sit at room temp 30 minutes. S&P then 30 - 60 seconds on each side in a screaming hot cast iron. We like ours rare. A little longer depending on your doneness, but don't overcook them whatever you do.
