It's what's for Lunch

Friend of mine lives in Maine and guides for fishing and hunting and sent me 5lbs of his latest smoked Salmon. I went up there 10 yrs ago to visit with he and his Bride. I have had him down hunting several times and we trade. He sends Salmon and I send large rolls of cheddar and Jalapenos summer sausage. I prepare a spread with some and eat the other just like today...Yum!!

He lets the Salmon brine for 24 hrs and then smokes it...Mighty Fine!

I love me some salmon. I eat fish 2-3 a week atleast.

I could only eat 2/3's of it, no dinner I am full as a tic..It is super rich and that piece is only 3in x 4in.
