Key Lime cheesecake

My first and maybe last attempt at a key lime cheesecake. I made candied limes a couple of days ago for decoration. For some reason the cake would never set. What should have been an hour cooking time went well over 1 1/2 hours. Waiting for it to cool now.

I'll probably just eat a slice and give the rest away, that's typically what I do with my creations. If I ate everything I cooked I'd weigh 500 lbs.

Key lime and cheese cake are two of my favorite things. Mix them together and it’s a win win.
Being a diabetic has its disadvantages but I would definitely eat a slice of that and deal with the issues later.

I enjoy baking but I really shouldn't indulge. I ate one slice to make sure it was good (it was) and gave the rest away.
