I know I'm not the only one firing up the smoker this weekend. Let's see what you're cooking. Butt for me, rubbed and let sit for a day and a half, just went on after a quick dusting again with rub. Will go traditional 225-250 with hickory wood and no wrap.
 
8 hours in and the stall is in full effect, was 167 down to 165 and holding. Still 4-6 hours to go at 225.
