anyone have recipe for either standard or Cajun boiled peanuts?

I have a crockpot or stove to cook from. I could buy other items if necessary.

I typically do 2-3 pounds of raw peanuts because I cannot find green peanuts in Atlanta.

I use zatarins boil mix if I go the Cajun route. I like them extremely spicy if I go Cajun.

In for info . . . . .

Crock pot overnight (or two) on high works great. I've used raw too, cannot find green, which would be better. Lots of salt. Haven't had much success getting good results on Cajun.

You can find green peanuts at the international market in Smyrna. We do most of our shopping there for meats and produce.
As for recipes I would use salt, crushed red pepper, and cajun seasoning. My wife just uses salt.

For green peanuts (which is all I will boil), I use about 1 cup of salt and enough water to cover 2-3 lbs of peanuts. Boil about 1.5 hrs, then turn off burner for 30-40 min to let them soak. Check a few to see if they're salty enough. If not, let them soak until they are. I sometimes add ice to speed up the salt transfer.

I find green peanuts at some Walmarts in August-September. I've also found them in small bags at a few Kroger stores in the refrigerated section, near the bags of lettuce & shredded cabbage. Expensive, though!

As for Cajun, I just started experimenting with them. Used some Zatarain's Pro Boil, but obviously didn't use enough!
