Looking for the do all pistol.

Out of your choices I would say the G17. I have a G27 a G23 and a G20. For do all, it is definitely the G20. From the different bullet weights you have self defense and hunting ammo and you can also buy a barrel conversion for it as well.
 
I know many have said the same thing here but when someone says "do all" pistol, the G19 is the only thing that comes to mind.

The G17 is an excellent gun but may be a bit big for concealed carry except in cold weather when you could cover it with a large jacket.

The G19 is slightly easier to conceal and while its normal magazine capacity is 15, it can also use the 17rd G17 mags, they just stick out a little further.

I think of the G19 as a standard setter in what I will call the "Concealable while retaining adequate capacity" category. I have traded away several pistols that I originally thought I would love after comparing them to the G19 and passed up opportunities to buy other pistols for the same reason. The 19 always beat those others in either ammo capacity, weight, size or comfort.
 
There is no way that I would carry the P320 over the G17. Actually, I might suggest buying the G22 Gen 4, which is a .40 cal and buy a 9mm conversion barrel. That way, you always have options. All in with a 9mm conversion barrel is around $550.
 
I like my M&P9 full size. I carry it appendix carry everyday in a Blackpoint WM with a TLR-1HL and has been a charm. Easy to shoot, plenty powerful and cheap to feed.
