Just a light dusting.....I toss them in a bowl with a few pinches of salt and baking powder. Toss em till they're lightly coated. I'll toss them in sauce afterwards...or right after they come off you can toss them in the lemon pepper or ranch powder is great too...About how much salt and baking powder do you use? I've got 10# of wings sectioned up and will be firing up the smoker in next 1/2 hour. Also, do you add seasoning (lemon pepper) at start or do you wait? Saucing them after they are cooked is a no brainer with either buffalo or teriyaki.
