Mexican Shredded Beef- Crockpot Found!

Wife hid the damn crockpot on me!
Still turned out awesome, first time!

Buy a roast (chuck, pot, etc.) mine was 3-4 lbs.
Sear the roast on the stove.
I long sliced 3med. Onions.

Since my crockpot was missing, I used a Corning Ware casserole dish with a glass lid.
Grease or cooking spray the bottom.
Lay the raw onions on the bottom.
Sprinkle 1/2 a packet of fajita spice powder.
Lay the roast on top of the seasoned onions.
Sprinkle a whole pack of fajita powder on the roast.
Then I put 2/3of a jar of salsa on the seasoned roast.

Cover with 2 layers of foil and cover with glass lid to make it airtight.

I kept it on the smoker @250 for 7 hours, you could probably do the same in the oven.

Took it off, drained the grease and some of the liquid.
Shredded the meat into the remaining liquid and onions,

Tomorrow, I’ll reheat the meat in a sauté pan, and add it to some tortilla shells.
Add some cheese, salsa, and anything else you like.
Enjoy!

That’s one of my favorite ways to make Mexican whatever and the most requested meal from m6 hunting buddies. Great for when you are off hunting and can just plug-up the crockpot in the morning and dinner is ready to put in burrito shells in the evening.
I used to use London Broil but have also used pork, and boneless chicken works just as well. If you use those slow cooker bags you can throw chicken in one and beef in the other. I like mine really spicy so I use a couple cans of
of chopped green chilies, a can of Chipotle Peppers in Adobo Sauce, and a pack of taco seasoning powder for every couple pounds of meat.
