Mexican Shredded Beef- Crockpot Found!

Had some stuff in Tucson, carne seca, literally dry beef, think well done roast beef meets soft beef jerky, pulled into tiny threads of meat, finer than shredded. You would think that with the meat so mutilated that it would lose flavor, but nope, very tasty.
There was a restaurant there that was famous for it, Bill Clinton had even been there for it, his picture on the wall.

Solid performance by the crockpot.

Pulled, shredded, and blended with the onions.
Pour off most of the liquid.
