If you can find belly lox, you want have to go to all that trouble. I order mine from Russ and Daughters out of NYC. And of course I order some other delectable goodies to go with. Their rye bread is 👍. Belly lox in Atlanta is hard to find except at Goldberg's on Weiuca/Roswell road.
 
Nice. I love Lox. One of these days I'm going to get a cold smoker. I make my own Gravlax. Similar to Lox but not smoked. Cured in the fridge with salt, sugar, and whatever flavors you like. Traditional Gravlax uses dill. I mix a little liquid smoke in with the sugar and salt. It's tasty and easy to make.

What type of wood is that you have holding the racks up? Also, what type of wood did you use to cold-smoke?

The planks are cedar, but that doesn't really matter. They don't come in contact with food and the whole thing sits at ambient temperature.

Fuel/smoke was mostly hickory with some oak and mulberry.
