In my attempt to level my street truck ('07 Tundra), I have decided to lower the rear so that it's level with the stock front height.
Are their any issues / problems that I should be on the look-out for?

Cheers!

I feel pretty certain that front will be higher than rear with a 4" drop to back.
pretty straight forward install though, but does require welding the spring perches to the axle tubes.
I've got an 05 Ram that sat about 3" higher in the rear, 2" drop shackles and removing the overload spring brought it dead level.

Driveline angle could be a problem. If it is wrong, you will get vibrations and reduced u-joint life.

Update: I found out that the Hellwig is not compatible with the Belltech - items returned, refused & refunded.

The correct / compatible combination of parts are available from SOS Performance
I will be using a TRD rear sway bar with the SOS kits.

Here is a crew cab with the 3.75" dropped rear, and stock suspension up front.
