Refinish wood stock- polyurethane vs. oil?

I repair and refinish furniture from 1800's to early 1900's and have refinished my father's gun stocks. One was a .22 he bought as a kid in upper state NY with his paper route money and the other was a Eddystone military 30-06. I finished both with Boiled Linseed oil hand rubbed and polished. You could also use Tung oil.

No poly though.
 
Tung oil usually takes longer to cure than BLO. I'm talking weeks for tung oil vs a day for BLO. For that reason, most of my refinishes are BLO. Oil finishes are super simple to touch up if you ding them, vs a urethane finish also.
 
Urethane looks like a 1970's porno flick bar top.
