Scale

This was in the price range I was hoping for but seems a bit to finicky for me.

It's not any more finicky than any other electronic scale.

Dude in the video is never going to get accurate weights with the scale sitting on some sort of pad.

It needs to be sitting on a solid surface.
 
Well, if you stick to RCBS, Dillon, Hornady, Lyman, and other known name-brands in reloading, you will have their backing for any issues—at least for one year.
I like my Lyman 1500, but it has been replaced and discontinued. I still have my Ainsworth electronic balance I bought in early '80s or late '70s. It was the first "affordable" digital scale and it still working just fine.
For all balances, protect from breezes, keep clean, and avoid vibrations. For beams, store with beam off the unit and covered. Beware of fulcrum wear, damage, or rust.
 
I learned to use an analytical grade grade tr balance beam balance, completely mechanical, with jewel bearings like a watch. It was in a glass case.

One of the demonstrations was how it could weigh a breath.

Any really accurate measurements should have the scale in a glass case, on something like a large piece of granite, because a really sensitive scale will respond to air currents, and any vibrations.

I can't even find a picture of the mechanical scale we used.
