It's rare that we get any ,so I stick with rolling in flour ,browning on both sides, salt & pepper ,then turning the heat down low and covering them ,flipping once more per side while on low .:)

Buy a box of stuffing. Throw the spice pack away. Buy a small jar of apple sauce. Make the stuffing then mix it with the applesauce. Stuff the quail with it. Wrap market bacon around the quail then secure with a toothpick. Bake in a deep cast iron skillet with lid on 350 degrees for an hour. Remove lid and return to oven for 15 minutes on 375 degrees.
 
Partially debone it an cut into sections, how to vids online. Salt/pepper an dust a bit of flour, pan fry. Vietnamese dipping sauce, easy, just lemon juice, salt an white pepper. We normally have it just like that for a snack, wife is Quail crazy, probally her favourite thing to eat.
 
Here it is peppers onions and garlic cooked with butter for 5 minutes. Put them in the bottom of baking dish. Salt pepper and garlic powder then of coarse bacon. For good measure a little Parmesan on top. Going to bake for a hour. Details to follow. Thanks to everyone for their input.
