Smoke or Grill Pheasants??

Brine them, wrap in applewood smoked bacon, season with Plowboys Yard Bird rub, and smoke them over cherry/apple wood at 300 degrees spritzing with white grape juice often after the rub has set up.

How long would you brine them? I have a turkey brine I have used before smoking them. It's honey, chicken broth, cooking salt and a few others I think. Is there a good brine to use on wild fowl?

This sounds good. I have a couple from my company retreat at Barnsley and was saving them until I could find a good recipe. Any idea how long to cook? Just as a reference,.
