Been seeing these floating around the interwebz and gave them a shot.
Smoked at 275° for 2 hours
Glazed with hot peach pepper jelly and finished in the oven at 350° for ten minutes.

Damn! I just picked up ground beef and Italian sausage to make that.

What’s the verdict?
They are great! I'd recommend no lean meat at all and definitely use plenty of cheese. The manicotti shells soak up the grease. Next time I'll add cream cheese to the mix.

If there were any left over they would make great leftovers. Family ate them up quick.
 
No offense. It looks like you executed them well. I just...that's a textural nightmare to me. A manicotti that's been hydrated with fat and oil, wrapped in bacon...I couldn't do it, man. :laugh:
My wife is like that with textures. She loved them. But I completely understand. The Italian side of me really didn't like the idea. The Irish side of me took a shot of whiskey and wanted to fight so I distracted that part of me by eating and enjoying them.
