I've done 'em this way...the key is to refrigerate for 4 hrs before smoking. Softens the shells...

No offense. It looks like you executed them well. I just...that's a textural nightmare to me. A manicotti that's been hydrated with fat and oil, wrapped in bacon...I couldn't do it, man.

Yes sir, actually got them all put together, wrapped up and put in the refrigerator, spent about 4 hours down on my range getting new targets put up and then came back and put them on the smoker. Definitely a good day.
