Putting these in around 9:30 tonight. Cooking at 225-230 til IT hits 160. Pull out, wrap in foil and cook til IT hits 190-195. Wrap in a towel & put in cooler for 2 hrs & pull apart. Covered them in mustard, generous Bad Byron’s and brown sugar. Nothing but hickory on these - presoaked in water for 1-2 hrs- seems to take that strong bitter taste out.
Have 8-10 buddies coming over for the fight. Would love to see Bones get his butt whooped but I doubt it.
I have to say it, these butts be lookin good!
