so this was a huge win...venison poppers.!!!!!

only one made it to the end, so finished product pics are limited.
big jalapenos
cut in half and gut the seeds.
8 oz of cream cheese softened
3 cheese fiesta blend about a hand full.
venison strips cut into links about the size of your pinky finger.
bacon,
season the deer with salt and pepper or you favorite rub. i put it in a sandwich bag and shook the seasoning to cover the meat.
let it sit in the fridge for an hour or so to allow the seasonings to soak into the meat.
mix the cheese and cream cheese.
spoon into jalapeno halves
add in the meat and wrap with bacon. let them sit on a pan in the fridge for a half hour or so. that makes the bacon tack up and stay wrapped.
sprinkle with your favorite rub or a salt and pepper mix.
put on the smoker at 225 for about an hour. if you dont have a smoker a grill or stove will work. just higher heat and shorter cook time...
pull them out, let them cool for about 5 or so minutes...... and grab a few quick, they wont last....
i made 18 and with 10 people for dinner, only one made it to pic time,
this is one of the best poppers i have ever had... they became the hit of dinner over all the the other food....

So I was told I had to make them again tonight..
Added more shredded cheese to the mix...
I almost didn’t get a pic before they ate them all...

Looks good. Can't ever go wrong with poppers.
A few recommendations for future if you're willing to try.
1. Smoke your cream cheese if you have a smoker. We use applewood since it pairs well with the bacon
2. Brush on some hot pepper jelly and put them under the broiler for like 5 minutes

That combination will add a sweet richness to it.

i smoked them. may try the pepper jelly, but the boss is not into real hot stuff. i thought about broiling them, but they got attacked as soon as they got in the house. i made 20 of them tonight, and before i could get the pic it was down to 5...
