I got this idea from the pre-packaged stuff at Publix that you just put in the oven, but I made it way better than their version. Fairly simple to make and one of the best dishes I've ever made. You'll need chicken breasts, olive oil, good balsamic vinegar glaze, fresh spinach, and good, crumbled feta cheese.
Butterfly chicken breasts, stuff with chopped spinach and feta, top with more spinach and feta, light drizzle of olive oil over everything, generous drizzle of balsamic vinegar glaze over everything, bake at 350 degrees for about a half hour.
