Hey DD. Growing a garden, I can sling a squash casserole blindfolded. I don't like the recipies that call for any creamed soup. I don't cook the squash too long. Don't like it mushy and soupy. I just scramble an egg, 1 cup of grated cheese and stir in about 4 cups of cooked squash and 1 onion. Top with Ritz cracker crumbs drizzled with melted butter an bake. Sometimes I will add okra, grape tomatoes, grated carrot, and water chestnuts for some crunch. Just depends on what I have. I forgot, I use 1 sleeve of crackers, half go in the mixture, the other half on top. and a tsp of salt in mix

Dang DD looks great. Just need some cornbread and pintos.
LOVE SQUASH CASSOROLE ! WE EVEN MAKE IT WITH THE GREEN ZUCCHINI !
