I bought the thin sliced steak, about 1lb.
This time I used the dehydrator instead of the smoker.
Pat it dry after it comes out of the marinade.

Here’s the recipe:
2/3 cup Kikoman orange top teriyaki sauce
2-3 tblsp Siracha , more if you like a lot of heat.
2-3 tsp Sesame oil.
2-3 tsp liquid smoke

Mix in ziploc.
Marinate 2-3 hours.
Last 30-45 min at room temp.

Pat dry with p towels prior to dehydration.
Keep the meat whole.

Dehydrate 150-165 degrees about 1.5 hours
More or less to your desired degree of stiffness.

Refrigerate a few hours or overnight wrapped in p towels in a ziploc.
Slice after it’s been refrigerated.

Turns out great,
Perfect blend of flavors.
Enjoy

top round, flank steak works.
A slight amount of marbeling is not an issue.

Keep it whole while cooking.
Never tried it this way till now.
Way easier to slice after cooking.

I forgot.
On half of the meat, I sprinkled a little BBQ rub for a slightly different flavor.
Looked cool when it came out!
