I still remember my first Elk steak..I went on a hunting trip to NW Colorado...Guide met us at the airport and took us to the stables to get our horses for the hunt..When we got there the camp cook was grilling up some elk..He asked me what I wanted and I said a bone in Ribeye..He pulled out what looked like 3lb steak and put it on...Damn thing was so heavy it sagged when he pulled it from the cooler..Man what a great steak! I fed on it for 3 days..
