What am I cooking?

Do you know a secret place for affordable ox tail? since they charge by weight, it seems like I'm mostly paying for big boned animals with no meat lol. Most places charge more for oxtail than ribeye or new York strip. Back in the day the ox tail would be thrown out or sold for nothing

Found a small package at Publix for $18. You can see the amount in my first pics.

Recent influx of immigrants has many items that were formerly waste here now being sold as staples… or delicacies.
 
It's Beef Pho, which is a Vietnamese noodle bowl dish. The broth will simmer for up to 12 hours, then it's strained and poured over rice noodles, thin sliced raw beef, bean sprouts and topped with green onions and cilantro. Then you can add sriracha and/or Hoisin sauce to taste.

.....other ingredients not mentioned above are:
  • Roasted Onion
  • Roasted Shallots
  • Roasted Ginger
  • Brown Sugar
  • Fish Sauce

I know this seems like a lot of work, but I'm running out of new things to do on the smoker. Plus I'll be canning the remaining broth.

Pho and ramen are both incredibly awesome when done right.

Have no doubt you did it right. Looks awesome bro.
