Have you ever tried to spatchcock a turkey? It’s amazing when combined with brining.

That looks tasty!!! Oh yes and I have two more birds in the freezer. One will surly be brined, spatchcocked and the skin stuff with Boudin. I brined the one above as well.

Turned out AMAZING! Ended up with 10lbs of boneless smoked turkey. Then I used the bones to make 6qts of the most incredible turkey stock........and I still have two more birds in the freezer.
