Here are some to start.
South East: Stewed, Sautéed and Braised Vegetables. Ham, Fried Chicken and Fish. BISCUITS, Cornbread
NorthEast: Baked Beans, Turkey and Dressing, Cranberry Sauce, Clam Chowder, Reuben Sandwiches, Crab Cakes
Southwest: Chile con Carne, Chile con Queso, King Ranch chicken/nachos, Taco Salad, Sopapillas

Made Reuben sandwiches for dinner! (A little thin, but you can eat more)
