About as easy as it gets tbh. Coarse salt and pepper, pit at 275-285, spritz after the first couple of hours every hour or so, pull when jiggly and probing like butter (around 200-205)

without a doubt my favorite cut. Flavor and texture out of this world. It’s brisket with training wheels.

Agree... short ribs are awesome and super easy.

Take it off yet? Got one I’m thinking about bacon wrapping in the freezer. Heard they turn out great cooked low but have traditionally just crock pottted and pulled them Before getting into smoking. Not sure what to do with this one in the freezer .
