I'm doing my first brisket today too. I'm starting it at 11 then going to bed. Shooting for it to be done by 3 tomorrow. I've been too scared to try one.

Wanted to do some butts today, but the danged wind was way to strong in my A.O.
Got some loins in the oven instead.

It definitely takes time I decided to not wrap it and bump the temp up to power through the stall due to lack of a good bark. I think that helped a lot but still have another hour before I cut it. We will probably sample some tonight and reheat tomorrow for a better dinner. I wish I had started earlier lol

In at 1030 pm. Wrapped at 0530. Done at 1030. Rested until 1130. Turned out perfect. Went quicker than I thought.
