Who’s Smoking Today

Dinner for tonight.
Smoked Beef Eye of Round (injected with roasted garlic & herbs marinade, dry rubbed with Meat Church Holy Gospel),smoked on 225 until 125f and rested for about 30 min then seared on the smoker on all 6 sides at 400f. Duchess Potatoes (mashed and then baked with butter, minced garlic & Italian Cheese mixture), English peas and fresh sliced grilled pineapple. Nice glass of Bourbon Barrel finished Pinot Noir.

17lb packer brisket. Trimmed the fat but didn't bother separating the point from the flat and probably used more red and white oak than charcoal.
Fed 12 people with enough leftovers for another dinner.
