inject meat with peach, pineapple, or apple juice.
Rub entire service with any yellow mustard.
The mustard is just a vinegar based binder for dry rub
Cover meat with favorite dry rub
I prefer a sugar based rub I make myself
Brown sugar, white sugar, cayenne, black pepper, salt, cumin, paprika
To me, pork does better with a sweet rub
Let stand in fridge overnight
Fire up smoker and maintain a temp of 225-240 degrees
Smoke Boston butt to an internal temp of 185-190 degrees.
Pull and enjoy
To me, sauce is a personal preference. Make it available for those who prefer it.

I'm positive none of the ones I've had were prepared like this! This sounds right up my alley...I might have to give this one a shot!
 
Boston Butts are so tempting bc of the price, but I've never had one I liked and I've never been able to make a good one either. Got a good recipe?

I make carnitas using Boston butts.

Cut in 3" chunks
Salt and pepper
Put in crock pot
Add Mexican coke, Mexican beer, chopped garlic, quarter a large orange squeeze and put quarters in pot.
Cook all day.
When done, put broiler on high, place meat on cookie sheet and gently mash with a fork.
Spoon 2-3 spoonfuls of liquid from pot over each carnita.
Broil until tops are crispy
Serve with a good tortilla, black beans, avocado, etc..
