The only real way to know is to use it. If the knife is sturdy, does not break even if given a beating, holds a razor edge for a long time, and is easy to re-sharpen, then that to me is a quality knife. Price is usually associated with Quality - however there are excellent knives out there...

Ammo shelf life questions come up all the time. The universally accepted answer is that if the ammunition is consistently stored in a cool dry environment, it will last at least someones lifetime. Personally I think it would be good for several lifetimes.
I have some basic rules of thumb that I read about a long time ago, they made sense then and still do today.
500 rds per centerfire handgun
1,000 rds per centerfire rifle
and about 2,000 - 3,000 of QUALITY .22 LR, such as CCI Mini Mags.
